Borders has a book of essays on Twilight.    The title is A New Dawn, and it is edited by Ellen Hopkins.

On Stephanie Meyer's website you can find a draft of the first seven chapters of Twilight from Edward's point of view.  It is just a draft and therefore has mistakes, but students could view thebook written from Edward's perspective.  It is found under Midnight Sun and is listed as partial draft, close to the bottom of the page.
